Only a few casks were selected for the Handcrafted Edition. This is one of the few Tennessee whiskies to carry an age statement. It was matured for 8 years and filtered through charcoal to ensure that the overall result is particularly smooth in flavour. The unique spelling of "whisky" without an "e" stems from the desire to reinterpret American whiskey and to elevate the flavour experience to a level that can compete with the best Scotch whiskies in the world. To this day, George Dickel continues this tradition in order to give the Cascade Hollow Distillery's bottlings new perspectives.

George Dickel Signature Recipe is a handcrafted small-batch Tennessee whisky based on the long tradition of charcoal mellowing and careful barrel ageing. At 45 % vol. (90 proof), it is stronger and fuller-bodied than the George Dickel Classic Recipe and is made from a mash of 84 % corn, 8 % rye and 8 % malted barley. The whisky is matured in new, burnt American white oak casks and impresses with its complex flavours of ripe fruit, toasted oak and subtle hints of vanilla and spices, before fading into a long, smooth finish. Confirmed by numerous international awards, Signature Recipe stands for the combination of expressiveness and elegance that characterises the distillery.

The George Dickel Signature Recipe is the direct successor to George Dickel No. 12, as the product was renamed from "No. 12" to "Signature Recipe" as part of a marketing change by the current owner of the brand. The whisky itself has not changed, only the new label reflects the repositioning of the bottling, which is made from the same mashbill as its predecessor and undergoes the same filtering process through layers of charcoal. The alcohol strength of 90 proof (45%) has also remained the same.

Originally known as George Dickel No. 8, it is now regarded as the distillery's standard bottling. The mash consists of 84% maize, 8% rye and 8% malted barley. Before maturing, the whisky is filtered through charcoal made from sugar maple in the Lincoln County Process, which gives it a particularly smooth profile. It is then matured in new, burnt American oak casks and bottled at 40% alcohol (80 proof). Classic Recipe offers fine notes of caramel, vanilla and light oak, rounded off by a subtle sweetness. The Cascade Hollow Distilling Co., home of George Dickel, is one of the few distilleries in Tennessee to maintain this artisanal style to this day. The spelling "Whisky" is a reminder of the founder's claim to produce a drop of the quality of a good Scotch.

The designation "Bottled in Bond" goes back to a US law from 1897, which ensures that the whisky comes from a single distillation season of a distillery, matures for at least four years and is bottled at exactly 100 proof. This batch, distilled in autumn 2005, has a rich, complex flavour with notes of dark fruit, vanilla, toasted oak and subtle spice, leading to a long, complex finish.
